the must is subjected to alcoholic fermentation with a 10/12 day long maceration on the skins with frequent pumping over.
Aging
after the racking, the wine ages for several months in steel tanks. After bottling, the wine ages in bottle for 8 months.
Organoleptic properties
intense ruby red color with strong purple reflections. Intense bouquet, hints of red fruits, cherry, plum and delicate hints of vanilla.
Pairing
ideal with cured meats, red meat stew and medium-aged cheeses.
